Better late than NEVER...

Happy LATE Thanksgiving everyone! I'm sorry that I haven't been on in a few days. My internet has been down and I have been so busy working and spending time with family. :) This morning was my work's 5th Annual "Pajama Party"..which started at 5am!! I had to be there at 4:30, which means I have been up since 3am, and am just a little tired. So, this might be a short post.

My aunt, uncle, and cousin Danley came into town on Wednesday for Thanksgiving. I just love when they come to visit and stay with us! We all missed my cousin Darby so much! She was having a GRAND time at Disney World for show choir and wasn't able to be with us on "Turkey Day" My dad and I spent Wednesday night together doing some shopping and eating dinner.
The weather was wonderful on Thursday! Perfect weather for a fun-filled day with family!

Look at my cool little cousin Danley! We decided to have a photoshoot while waiting on everyone to get ready!

My brother Kyle and I. This is sadly..the best picture. He never takes a serious picture! My grandparents put their tree up early because we gave my brother and his fiance' their Christmas gifts early...they will be in England with her family on Christmas!

Kyle and Rebecca.

Carving the BURNT turkey..This was however a very good tasting bird! My "Unbundled Green Beans" were so yummy! I hate I didn't take a pic of them! Recipe will follow soon :)

Check back later this week to hear about my Black Friday shopping and to see pics from the "Pajama Party"! I hope everyone took time to thank God for all that he has given us!

Have a FABULOUS week my blogger friends!!

YAY! It's Friday! I just love the weekends! I also love that I don't have class for a whole week and 3 days!!
This morning I had a very sweet, lovely customer at the boutique I work at come and bring a surprise for myself and the other girls! Mrs. J called yesterday and asked how I was doing and when I was working next. I told her I worked today and she wanted to bring a treat! She stopped by this morning and had homemade chocolate chip cookies on a cute gold platter! She gives the best hugs and is always in a bright and cheery mood! So sorry I didn't take a pic, but here's one that looks similar to the wonderful treats I had!

Last night I started wrapping presents for Christmas!!! Can you believe it? We are celebrating Christmas for my brother and his fiancee, Rebecca at Thanksgiving. They are spending Christmas in ENGLAND!! Her family lives there. and they go celebrate Christmas there every other year. I can't wait until their July 2010 wedding in England!

Bye Bye Mali.

The Mali' (my trusty car) let me down again today...this time smoke from the hood was not involved...just some cap under the hood broke...and caused the Mali to run no more. It stinks I wasted a brand new Tyler Candle Company air freshener (I put it in the Mali this morning) and that I wasted $25 on gas for her.. O well!

This means car shopping this weekend and next week for me! YAY! Any ideas on a type of car or SUV? Anything I SHOULD NOT get?

This weekend will be crazy busy, because it is Holiday Open House at my work this weekend, and I have family coming down for the weekend. You bloggers might not hear from me much this weekend..but I promise I will have new pics next week!!
Go HERE to get a special coupon if you want to come see me at work this weekend and start some Christmas shopping!!

A Journey Through the Waiting Game is having a super cute giveaway! Go check it out! She also has an Etsy store! You will love her blog too! Her 'What's for Lunch Wednesday' posts are my fav!

Have a FABULOUS weekend!!

Yummy!!

Guess what I just made? A DECADENT PEANUT BUTTER PIE! I came across this recipe last week and just knew that i would be making it soon! I absolutely LOVE anything that has to involve peanut butter or peanuts! I could eat peanut butter out of the jar with a spoon! (wait a minute..i already do that :).hehe)

This is really yummy and you should all try it! It is really simple and easy to make!

Decadent Peanut Butter Pie

Ingredients: 1 cup Jiff Creamy Peanut Butter, plus 2 tablespoons, divided

1 (8oz.) package cream cheese, softened

1/2 cup sugar

1 (12oz.) container frozen whipped topping, thawed and divided

1 prepared chocolate pie crust

1 (11.75 oz) jar Smucker's Hot Fudge Spoonable Ice Cream Topping, divided

Directions: 1. Beat together 1 cup peanut butter, cream cheese, and sugar in large bowl with an electric mixer on medium until well combined. Gently mix in 3 cups whipped topping until thoroughly combined. Spoon mixture into pie crust. Using a spatula, smooth mixture to edges of pie.

2.Reserve 2 tablespoons of hot fudge topping in the corner of a resealable food storage bag; set aside. Microwave remaining topping on HIGH for 1 minute. Stir. Spread topping over pie, covering entire peanut butter layer. Refrigerate until set. Spread remaining whipped topping (1 and 1/2 cups) over hot fudge layer, being careful not to mix the two layers.

3. Cut a small corner from bag containing topping. Squezze bag to drizzle topping over pie. Place remaining 2 tablespoons peanut butter in a resealable food storage bag; cut bag corner and squeeze to drizzle in opposite direction from topping. Refrigerate until readt to serve!

------------------------------------------------------------------------------------------------

Cora and Holly guessed correctly on what the project was I made. It's an antique tray which I polished and then painted chalkboard paint in the center. I'm happy with how it turned out and so is my mom. She has it on top of the refrigerator for now, and we will use it at Thanksgiving and Christmas to display the 'Menu' and also to keep messages on!

What do you think? I used 'Chalk Ink' found at Micheal's. Hobby Lobby probably has them as well!

Cora at Heartfelt and Homemade will be having some lovely stuff at a local craft show this Saturday! Be sure to check out her blogs! I'm excited to go to the craft show when I get off work! If you are in the area, I encourage you to go! Daleville High School, Sat. Nov. 14, 9-5.

Today was a wonderful day at home with family. I got to sleep in just a little bit. School was out because of Veteran's Day, and I had the day off from work. I made some delicious waffles for breakfast, got the paper, played with my sweet Chloe, and mom and I decided to go visit my granparents. I helped my me-maw decorate some for Christmas. She likes to get it up early!! Us girls went to some shops in their town and did some Christmas shopping!! :) I just love Christmas shopping for others!! I then came home, relaxed, made the Peanut Butter Pie, cleaned the dishes, BLOGGED, and now I'm going to get ready for tomorrow. I have math tomorrow :(. I dislike math with a deep passion...it's just not my thing.

I hope everyone has had a GREAT Veteran's Day! I hope you have taken time to thank God today for all the men and women who have faught for our country and those who are still fighting. Let's not forget to lift up their families as well!

Have a great end of the week!

Happy Monday!

Hurricane Ida is getting ready to make landfall. I believe the weather people have said it is now down to a tropical storm, not 100% sure. Correct me if I'm wrong. It has rained off and on this afternoon, so I did what I normally do on Mondays, before the rain got a little bad. Class went well today, which is always nice. Since today was Monday...I went to TJMaxx! I did find a few things. I have been searching for a small glass cake stand with lid..but NOT for $40! Everywhere I have searched for one (usually internet) they are always $40 or more..for a SMALL one! TJMaxx came through for me once again, and had a PERFECT one for $9.99! That's right bloggers, only $10! I was excited! I was sooo excited that when I got home, I wanted to use it right away. I had to make something to put in it and so I decided Chocolate Chip Mini Muffins!! They are my favorite and so yummy! What do you think?

I set my mini muffins on top of an orange dessert plate and added a zebra print ribbon! I cant wait to put cute christmas cookies in here, floral decoration, or a pound cake cupcake with cream cheese icing! O the possibilities are endless!!

I worked on a project today and I wonder who can guess what it is! I will post a pic either tomorrow or Wednesday of what the answer is. What am I making that uses these 2 items (plus 2 more items)?

I'm going to let you bloggers in on one of my favorite things to eat. I am a HUGE pasta fan, and this particular pasta is the best! Ready in only about 10-11 minutes after your water is boiled, this delicious Tortellini is YUMMY and perfect for quick meals. I had this tonight for dinner :) It's really inexpensive. A small 8 oz. bag which is about 2 servings, maybe 3 (if you eat tiny portions) is $3.50, and a 12 oz. bag which is about 3 servings, maybe 4 is $4.50. Try it and tell me what you think. It's good plain with fresh parmesan cheese, or with pasta sauce, or Alfredo sauce!

I hope everyone has a Wonderful week!

Busy, Busy, Busy

What a busy weekend I have had! I worked all day Friday and all day Saturday. (945-615 both days) It wore me slam out! It probably didn't help that I wore my new boots both days :) Saturday night after work I recieved a phone call from some friends that are in Auburn and they were coming home for the Peanut Festival..I told ya'll it was a huge deal! I haven't seen them in quite some time, so I went! We had a good time, we did the normal eating and walking around. Some of them rode some of the rides. I rode the Ferris Wheel, which I'm not supposed too for another 3 weeks. I had a little surgery 3 weeks ago and can not do any physical activity or anything like that for 6 weeks :( This includes my Zumba aerobics class and fair rides. O well! Today, I slept in and it felt so good! I feel like I'm fully energized! Enjoy the pics of last night!

This big llama was in the petting zoo, which of course we had to take a peek at. He was soooo funny! He followed everyone around wanting food..which is a bit sad. We stayed as far away from him as we could..we were NOT going to get spit on!

This little goat was my favorite. He was the cutest goat there.

This camel so so tall! He was kinda cool too. The little boy behind us in line started crying because he wanted to pet it real bad...but us girls were taking too many pics with and of the camel.

This smart little goat took it upon himself to get his own food!

I have never seen a Yak before until last night. He kept licking his nose, which was a little gross. This is totally random, but do you remember back in the 90's, the 'Yak-Bak's'? The small handheld voice recorders for kids? I remember mine was blue. Did anyone have one? Or did your child have one?

Here's the Midway! This was taken at the top of the ferris wheel.

Look at all the different types of colorful caramel apples! They had some topped with marshamllow, sprinkles, M&M's, peanuts, and chocolate sauce! Yummy!

Tomorrow is Monday, which is my usual TJMaxx day!! Hopefully, they will have some lovely things to look at!

Can you guess what I have been doing while writing this post? Just guess?

*I have been listening to Christmas music!*

I just LOVE Christmas music! It has come on one of the music choice music channels on TV, and I was flipping channels and just had to get in the Christmas mood! What is your favorite Chrismas song?

Have a FABULOUS week!

The Mali is OK!

Thank the good Lord that my Mali is ok! Turns out there was a hole in some hose under the hood. I am no car mechanic. I just learned what my coolent light looks like! My dad had a local family friend mechanic tow the Mali to his shop and he fixed it for me. Let's hope the Mali is like brand new :) The saying is true, you never know what you have, until it's gone. Last night I was upset about not having a car and for sure that the engine was tore up for good.

Do you ever take Sunday drives? I love taking in the view on 'the day of rest'. A nice drive listening to some great jams can make most of your worries go away. I enjoy driving through the country the best! You can see everything from a family playing catch in the yard, elderly couple sitting on the porch, pretty flowers in bloom, sunsets on the horizon..all of these things remind us that we should enjoy each and every moment that we are given and never take anything for granted.
On to other notes..remember the FABULOUS boots I posted yesterday? Well my mother bought them for me today!! I was so excited!! I have been on the hunt for the 'Perfect' ivory sweater dress, and I found it yesterday. Slept on it, and went back today to get it! I bought this today from Express and I had a $15 off coupon!!

It won't lt me upload a pic, but here's the link. I promise it is NOT that short on me! It goes right above my knee.

Have a FABULOUS weekend everyone! -Lindsay

What A Day!

Let me start off by saying..It's been one of those days.

Class went really well this morning, which is always nice. I have yet ANOTHER research paper due next week. I just keep telling myself this is the LAST time I will take English again :) I have always been a fan of writing papers and such, but this semester needs to hurry up and get over with. I have to write a paper on a movie, explain how the movie was made and special effects and such. My professor said that most little kid movies work best because of all the technology they use. I decided to write my paper on Pixar's "Cars"

Have any of you seen this cute little movie? It explains to us that life is about the journey and NOT the finish line.

I was so excited when class was over with because I had a FABULOUS lunch date with my real good friend, Courtney. We like to eat at The Butcher's Block. They have a wonderful variety of meat, seafood, cheeses, and wine. They have a small lunch menu too!

I had the Chicken Salad Croissant and it was SCRUMPTIOUS! Courtney had the Brisket sandwhich topped with coleslaw. That's her fav!

I did some window-shopping and then went to work.

These boots WILL be mine soon :)

I called my mom when I got off and we went to a new mexican restaurant for dinner. I had the chicken and cheese nachos. (half-order) :) and mom had a dinner combination #1 which consists of a taco, enchilada, and rice. Our waitress was so friendly! She checked on us regularly, filled our water glasses often, had a little convo, and was in a good mood and glad to be there. It's hard to find that these days because people have no work ethic!! Another story, another time.

While driving home from dinner, my car made a loud beeping noise and knob thing was going crazy!! I looked ahead...and there was smoke coming from the Mali :( Needless to say..the Mali is spending the night in a random parking lot until a tow truck can get her in the morning. Thank goodness my parents were both in town! Pray that everything works out! Hopefully it will be no biggie! I mean I did do the best thing by pulling over ASAP! :)

The weekend is almost here! Who's excited? Any fun plans?

Take Care! -Lindsay

It's a BEAUTIFUL day!

I can not believe how gorgeous it is in south Alabama today. Monday's are always a little tough for me. After a great weekend, it's always difficult to get back into the swing of things. Today has been one of the best Monday's I've had in a long time. The weather might have had a little something to do with it! My mother made waffles for breakfast this morning before I went to class. O the joys of living at home!! My English 102 class was cancelled today, so I used that time to do some shopping! I went to Belk to pay a bill, and I was unaware that they opened at 10am. As I walked to the doors outside, two older grandmothers walked up behind me..this was at 9:47. The doors were locked. At 10:04 Belk employees opened the door. During those few minutes of standing outside, I had a wonderful chat with these two precious ladies, both were grandmothers. We talked about Auburn football (WAR EAGLE!), the gorgeous day we were a part of, family traditions, and the cost of bell peppers. One of the grandmothers told me how she wishes bell peppers cost $0.10 a piece as well as other veggies just like they did at local markets when she was younger. Both talked about their grandchildren and how ready they are for the holidays. Those two women made me think about how important family is and how important is is to cherish each moment you are given. We should always live in the moment, and not in the past or future.

After leaving Belk, I then went to one of my favorite places of ALL TIME! T.J. Maxx. I could spend hours in there! Today I spent an hour and a half. I am not one who enjoys digging and flipping through things, so I don't look through the clothing..only every once and awhile. I look through the jewelry counter, purses, accessories, and home decor. Home decor is my favorite! I can not wait to have a place of my own! Today I walked out with 2 canisters of small pink ornaments. My bedroom is black, white, and 2 shades of pink. Last year I bought a small pink Christmas tree for my room. The ornaments I bought today are going to be used to fill glass hurricane vases. They will turn out well, I promise. I've seen it in magazines and decided it would be cute for maybe my windowsill...any other ideas?? I love ANYTHING monogrammed and I love writing little letters to friends every now and then. I picked up the cutest set of "L" notecards for $3.99! Do you like to recieve 'fun mail'? I sure do!! The last items I bought were two SUPER CUTE Christmas aprons for my mother and I. We LOVE cooking together, especially during the holidays! I am getting them monogrammed and will show pics another day! They were only $7.99! O how I LOVE T.J. Maxx!

I could not leave my dear Chloe Elizabeth out on my shopping day, so I stopped by PetsMart and got her a new squeaky toy for being so good while she was home alone today! Let me let ya'll in on something. Chloe has VERY bad separation anxiety and it just hurts our heart when we have to leave her home alone for even a few hours. She is literally our "little baby"!

I will be trying out some new recipes from some new Nov./Dec. magazines this week, and if any are 'blogworthy', I will post them..so keep your eyes out!!
I hope everyone has had a FABULOUS Monday!

Can you believe it?

It's November!!
What a fun and busy weekend I have had! My weekend was spent with family, friends, and homework. Some friends of mine came home from Tuscaloosa, we carved some pumpkins, and attended the National Peanut Festival.
My good friend Caleb and I scooping out the guts!

Separating the seeds and 'gunk' so I could bake some Pumpkin Seeds

Our cute pumpkins lit up on Halloween! Mine is the sassy girl :)
Our finished products.
A sassy girl pumpkin, a man pumpkin with bowtie, and an 'L' for Lindsay

Welcome to the Peanut Festival!

Each year when I go to the festival, I MUST eat a corndog from the Official "Corndog Man". These are by far the best corndogs ever! The Corndog Man passed away a few years ago and now his family owns the business and keeps the customers happy year after year. Fair food is my favorite! Today I went with my parents to the fair and it was a lovely day! I enjoyed a corndog, Diet Coke of course, some Kettle Korn, pink cotton candy, and of course some boiled peanuts!! My dad enjoyed the fair food the most.

Enjoying some boiled peanuts!

Some friends that we ran into!

My mom insisted I get my picture with "Daisy" the cow.

There are many exhibits to look at. Numerous clubs, organizations, and talented people from the Tri-State area participate in different categories such as; photography, peanut scenes, recipe contest, best veggies, pumpkin decorating, and cattle.

This was my favorite pumpkin! This is a very cute Cinderella carriage!

Look at all these delicious prize-winning veggies!! YUM!

I hope everyone enjoyed their weekend! Have a FABULOUS week!
